I love my Cabbages, what can I say? A human revenant doesn’t appeal to me, and as I understand it during the stress tests only human Revenant was available.
Will we have multiple race options open to us for the upcoming revenant test and other beta weekends, or just human as in the stress tests/demo?

Only humans were available for the beta probably because they are the “standard” characters.
So i don’t think it’ll change unless Anet need to check races animations or stuff like that. Maybe if we have a full WE of beta.

I’m totally on the fence about whether I want to do a human or a Sylvari, as I have designs for each I rather like.

When it’s released we’ll definitely be able to make revenants of any race. Presumably in the later betas we will as well.

But it’s hard to say what will happen in this beta. I remember in some of the pre-launch ones only certain races were available, but that may have been because the starting zone maps for the others weren’t finished yet.
