I’ve seen a lot of players walk slowly during questing, at a pace of an NPC. How do they do that ? Is there a command to type in to walk like that ?

You can create a key bind for walking in your options menu (F11).

Yep. It’s one of several options which doesn’t have a default keybind but can be given one.

It’s well worth looking through the list every so often to see if there’s anything you would find useful. (I say every so often because Anet might change them and because you might change what you want. I thought the stow weapon option was pointless when I first started playing but now I use it quite often.)
