Way too simplistic. You need to specify between PvE, PvP, WvW roaming, WvW zerging, and dungeons.

Every profession has a big variety of builds. But most of them don’t have a chance in the meta, like almost every non-thief glass build.

This is easier than people make it out to be. Just count all the builds that are run and highlight when/where.
Engineer: 6-8 easily.
Tends to variations on 3 themes.
Conditions (2 or 3 kit)
Healing/Tanking (Bomb Kit, Elixir Based)
Power Rifle Builds (variations on utilities)
Thief: 4+ builds
Backstab high stealth (several variations on trait choices if not where points are spent)
P/P Condition based
Pistol Whip S/D based (PvP mostly)
Weapon choice changes of 2 (S/P etc)
Ranger: 4-6 builds
Spirit Support Build w/ shout
Spirit Attack Build
Longbow/GS Build w/ Signets
Evade Melee Build
BM build

gs/lb power ranger with MoC
trap ranger
a/d-s/t condition dancer
spirit ranger
shout/regen ranger

Eles bunker build still works pretty well, I play one and I can 1v3 on point for days. It just contributes nothing to team fights, so every other bunker build (which do contribute to teamfights) is a better choice.

Thief:
WvWvW: D/D or D/P
PVE: D/D or S/P
SPVP: S/P and S/D
Ranger:
PvP: Spirit bunker, boon bunker, high dps melee bunker, condition beastmaster, condition signet bunker, trapper condition bunker
WvW: all of the above plus full zerk, celestial, and about 20+ condition bunker variations.
PvE: Cavalier DPS and all of the above
Which ones are truly viable? (highly debatable but here we go)
PvE: no problems with most builds except maybe spirits.
PvP: spirits, high dps melee bunker, trapper condition bunker
WvW: condition bunker, regen bunker, high dps signet bunker and condition signet bunker.

Well this isn’t my main but I always liked mesmers variety in builds.
These are some of the community accepted builds in WvW because everything is viable in WvW I feel it is best to use what the community agrees is good.
20/20/30/0/0 lockdown build
20/20/30/0/0 PU condi
20/20/30/0/0 PU power
10/20/30/10/0 PU hybrid
10/30/0/30/0 phantasm
30 points for chaotic interuption instead of pu
20/20/0/0/30 shatter
There are some other pu variations out there but mostly very similar. I feel pu power and pu condi play different enough to separate. Chaotic interruption can be ran a few different ways also.

Obviously ‘for days’ was an exaggeration. But if you can’t 1v3 for a significant amount of time on just about any class of bunker then either your build is flawed or you are just plain terrible. Any defensive build has an inherent and significant advantage in this games PvP, even to the point that the only viable offensive builds are those that in some way ignore defense, such as with the current condition meta.
