Most likely, It will keep going up as long as people have more time than money, which with today’s economy is likely to be for a while.
Just wait until Season 2 starts, I suspect it will go even higher then. Once it hits 10g per 100g I will probably start buying gems again if I like the direction S2 is going.
You have to consider the gems to gold not in raw terms but of the purchasing power of gold. I would say it will top out once 800 gems converted to gold can buy one of the more rare Black Lion or SAB skins (currently 120-150 gold ish) as that pricing seems fair when compared to current gem store prices for skins.
If you look at the gold <→ gem conversion rate graph at http://www.gw2spidy.com/gem and expand the scope to cover the period from game launch to present, what you see is a fairly linear overall trend with some local fluctuations. On average, over 21 months, the cost to purchase 100 gems using gold has increased by about 50 silver per month. The amount of gold that can be purchased using 100 gems moves in lock step, so it shows similar behavior. If anything, the rate of increase has been a little greater in year 2 than in year 1, suggesting that going forward the rate will continue to climb at the same or slightly increasing rate.
Yes, over the long term the price will keep rising. Never underestimate the “cheapness” of a player. The only advantage is since the exchange rate is going up at a faster pace than general inflation, dodgy’s point of the gem to gold price of BLC skins on the TP coming down to the $10 minimum gem purchase level is quite valid. As it stands now, at 65.75g per 800 gems, 100 of the 224 skins on the TP have high bids under that price.

At that point Gem to Gold will be 8.67-11.56G per 1 USD/Euro. $10 for 100g without fear of being banned or have your account stolen. That might open up some previously closed wallets.
Also remember that gold from the exchange isn’t “new” but had been sequestered from the rest of the game by players buying gems with it. It would be like water from a thawing glacier.

IMO, currently, there is no reason to buy gold with gems. You can get sufficient gold for small things by doing normal content (without playing the TP or anything like that.). And large things are so expensive that very few people are willing to spend real money to get them.
For example, spark has a buy order of 888 gold. Currently $1 gets less than 6g64s, so the purchase would require $133 to buy. Who’s going to spend that.
Therefore, I predict that the gem to gold conversion will continue to rise until the price of purchasing a precursor falls within a reasonable range. (like… $40). Which means it will rise more or less forever.
