What profession would you suggest?
If you are looking to be lore friendly, then any class is open. Charr seem to be what typical fantasy humans generally are, in that they can succeed in any given role, and don’t necessarily have any specialty or weakness. So keep that in mind.
Of course there may be some classes where Charr fit in quiet nicely in comparison to other races. Warrior and Engineer make for great, Iron themed non-magical classes for Charr, and Engineer has the benefit of having “Charr-tech” looking skills (bundles/mines/turrets look like things you would find in the Black Citidel as opposed to Rata Sum or other capitals). Also apparently one of the Charr racial skills gives a nice tool-belt skill (Hidden Pistol).
Short answer: Any class. Although Charr Engineers make for the best Engineers.
Having both a Charr warrior and engineer, I’d say I’m slightly biased… But really – Play as whatever class you feel fits your Charr!
I’m far from the most familiar with GW lore, but Warriors and Engineers are basically the bread and butter profession for Blood and Iron legions, respectively. Ash is comprised largely of Thieves and Necromancers. There’s no shortage of Charr NPC’s and characters of these classes.
I’ve seen Guardians in Blood, Rangers in all three legions, as well as Elementalist. I don’t recall ever coming across a Charr mesmer NPC, but players often go Ash with Mesmer.
Personally, Guardian made the least sense to me for a Charr. I’m not sure how much virtues and spiritual zeal fit into the Charr war machine, but there are plenty of them throughout Tyria. (Most notably, the leader of the Vigil).
For the toast!

Your father in the personal storyline is a charr mesmer, if you choose him to be an honorless gladium.

I’d play whatever you like. There are Charr of every profession, and reasons for Charr of every profession. Some are less likely to be popular, but it’s not as if the racial skills matter for most folk, and from a role-playing perspective you can put a lot of flavor on most anything. Your warband includes a warrior, a guardian, a thief, an elementalist, and an engineer, whether you’re Iron, Ash, or Fire, and the remaining professions of necromancer, ranger, and mesmer are all reasonable if you prefer them, too.

Vallus Smokemane is a Charr Mesmer NPC, albeit an unreliable one. I don’t know what Legion he serves, although his warband’s tactics are similar to Iron or Blood.
My Mesmer is part of the BLOOD LEGION!!! /flexes and my pops is a honorless gladium.
Well I just started playing, but I have been looking at this game professions for quite some time and truth to be told they all seem pretty awesome to me. There’s no need for you to block yourself. You have enjoy every aspect of the game as possible, and find whatever suits you the best. Follow your Charr heart XD. I personally chose Engineer just because this is my first MMORPG so I wanted to start with a profession I found unique to this genre. Of course I will try the other professions and classes in time.
Good hunting

Wanting to protect your warband seens like a very Charr trait to me.
As for Charr Mesmers, I can’t remember which personal story mission it was, but back in the Beta when I was sampling all the personal story options, there was one mission with a Flame Legion Mesmer acting as the leader of the Flame Legion group in that mission. He used slightly different spells, like what appeared like some sort of phantasmal riflemen rather than Phantasmal Duellists, and he didn’t seem to use clones. Anyone else recall this guy?
And I don’t know for certain, but I heard that Charr Mesmers were not an uncommon sight in GW1.
