I understand ascended armour and weapons must be crafted by their respective craftsmen, but the Wiki was not clear if this is the same with jewelry, trinkets, back item, etc. Do I need to be a Jeweler to make these items? Thank you in advance.

There are a couple of ascended back piece recipes so far that are crafted by the armor making crafts.

You will most likely need a level 500 jeweler character to make the trinkets and what ever else Anet has in mind for the Electrum material.

Currently Jewelry Crafting is capped at 400 and therefore ascended jewelry cannot be crafted. Ascended jewelry can be obtained in the following ways:

Backpiece: Mystic Forge (using ectos and t6 mats or items bought with fractal relics), or level 500 armor crafting recipes recently added in this patch

Amulet: Purchase from a Laurel Vendor- 30 laurels or 20 laurels + 250 badges of honor in WvW

Ring: Relatively common random drop from daily chest in Fractals of the Mists at fractal reward level 10 and higher, Purchase from BUY-4373 in Fractals of the Mists for 10 Pristine Fractal Relics, or Purchase from a Laurel Vendor- 35 laurels or 25 laurels +250 badges of honor in WvW

Accessory: Very Rare random drop from Guild Mission completion chest. Purchase from Guild Commendation trader- 12 Guild Commendations + 5 gold. Purchase from Laurel Vendor- 40 laurels + 50 Ectos
