Do you actually have to craft these now as opposed to salvaging them from exotic dungeon armour?

Some are only craftable some are only salvageable.

You cannot salvage craftable insignias. On the other hand, some insignias cannot be crafted and must be salvaged or bought.

So I cant salvage Rampager insignia’s from Ascalonian armour? I swear I salvaged Magi’s and Soldiers insignia’s from Ascalonian armour before, and aren’t they craftable?

Rampager is craftable, Magi´s and Soldiers arent.

Salvageable insignias/inscriptions are:
Cavaliers, Dire, Magi, Shaman, Soldier,Rabid and Sentinel, while Sentinel is also obtainable via Guild Commendations.

Just a note though. You can’t salvage any insignias/inscriptions (even those that are usually salvageable) off of any crafted armor. Once an insignia is used for crafting, it becomes unrecoverable.
