Not sure if this is the best place to put this..

say on my level 80 character, i have 2 crafts maxed already. if i went ahead and did the other 6, would i still gain XP i.e. skill points by leveling crafting?

Yes. You would still gain 10 levels(and thus 10 skill points) for each craft you take 0-400 at level 80.
