So if I’m an engy, should I do a pistol with superior sigil of luck and then a shield with a Crest of the Traveler? Would the Superior Sigil of Luck erase the Crest of the Traveler if they’re on different weapons?

No it won’t. However if I were you. I’d have two pistols. One with the luck sigil and another pistol with a different sigil or crest. that-a-way it would help with your damage or magic find stat or whatever. See cause once you have a 25 stack you can switch to a different weapon and still have that stack. Only if you get downed and/or killed would you need to switch back to the weapon that had the luck sigil.

Does the ascended jewelry have as much magic find stat as the exotic crafted stuff?
I understand the amulet can have a infused piece with +20 you can’t get from crafting.

Ascended trinkets have 10% MF, Exotic trinkets have at most 7%

I would caution you about going MF on an engineer from personal experience. I have a full exotic set of crafted armor, 5 Runes of Noble, 2 Runes of Pirate (one for regular helm, one for water helm), ascended MF rings, MF back, and now an ascended MF amulet.
Full MF gear is a huge DPS loss compared to berserker gear, and you’ll be just as squishy. Even with grenades for AoE tags, a MF engineer is very weak. You will be great at farming Cursed Shore events when in a party, so you can get tiny tags and other party members also tag so the combined damage will be enough to get you experience and loot.
In all other activities, dungeons, fractals, as an MF engineer you will either have a hard time, or have to be carried by your group, which sucks.
If you intend to seriously go full MF, I would once again really encourage you to not do it in any serious setting (dungeons, progression fractals, WvW) and only use it for farming events. I would also recommend doing it on a warrior or another class which has higher damage AoE tagging.
It’s just for cursed shore farming and other open world stuff. I have a warrior just for dungeons. I wouldn’t kitten a dungeon run/group with a MF suit. I’m a considerate gamer :-)
