Crafting professions -> What Order ?
There’s really no particular order. If you find yourself playing a particular class most of the time, you can level the crafting professions that produce items that they can use. Keep in mind that if you’re just looking to equip one character, it’s cheaper to buy the armor directly.
Leatherworker will let you craft your own armor. Weaponsmithing will let you do the metal-based weapons just as dagger. Huntsman will do the wood-based weapons such as short bow and pistol.
jewelcrafting can be beneficial if you find gems fairly often (you have to mine nodes and chop trees to have a chance at getting a gem). trinkets dont drop very often and the only real way to get them is from Karma merchants or the personal story. That would probably be more valuable than cooking since your stats will be higher passively from the 5 trinkets you can make than anything you can cook.
i think the lowest level trinkets you can make require you to be level 10 though

I would personally go for leatherworker and cook first, particularly if you intend to get most of your ingredients gathering as for the most part they use different ingredients. You could also use jewelcrafting instead of one of these if you prefer for the same reason.
Animal parts and cloth are limiters in crafting. Try weapon smith, which will consume animal parts as you craft. Jewelry is relatively easy as it consumes only metal and stones you find mining.
Cooking is a problem because it consumes bag and bank space making complex ingredients. However, you will need consumables to speed leveling. Buy them for now. Do what you can to increase bag space, though. Switch between jewelry, leather, and chef as you need but watch you inventory of animal drops and cloth. They are choke points.
Cooking takes a lot of effort to be profitable. Its not worth it for game reasons (food is cheap) but get Cooking first if you cheaply want 7 levels.
After that, get the armor and weapon professions that your character needs. Anything you can craft you can buy cheaper until Ascended, so you are in no rush (but when you start to get rich, get to 450 in your craft, so you can start making time gated materials).
I think Jewelry is a waste of time.
