Discovery not finding items
You buy “Glass of Buttermilk”, well you buy “Buttermilk in Bulk” and then there are 25 glasses in the box …

Edit: Bowl of Roux – it’s a basic recipe that you get automatically (crafting lvl 75), you don’t discover it, just check in your list of the recipes, you can even try entering “bowl” of “roux” in the search field.

I am pretty sure the OP is not talking about being able to discover the recipes. He is talking about once he has created or purchased certain components the discovery window will not let him use that component to create further items that require it. I have not checked in months but for the longest time i couldn’t use carrots in the cooking discovery window. A basic item that is need in many basic cooking recipees which are then also needed in higher up items and so on. I was just interested in learning all possible recipes for completion of the craft but the game wouldn’t let me use those god kitten carrots lol. Four seperate bug reports to ANet over a period of a couple months accomplished nothing so i just gave up on it.
might not apply here but I find some times if its not in the discovery it means you can’t make anything with that at your current level or you’ve discovered all the recipes. but as he’s pointed out he knows he should still be able to make things so I doubt thats the case.
I looked up the ingredient you were talking about and a list of recipes they are used for. I never run in that problem and discovery always shows the ingredients, especially with basics like buttermilk.

Only recipe to discover is Bowl of Onion Soup and all ingredients show in discovery. Anything else for that ingredient is automatic. Double check your recipe’s or your current crafting level for that profession. Not every ingredient has a long list of recipes you can discover, some are not included in any discoverable recipe and need to be purchased at special events, seasonal events or karma vendors before you can use the ingredients themselves.
The Discovery pane only shows ingredients used in undiscovered recipes that are:
1. Either at or below your current Cooking level (shown in white)
2. Are 25 points higher than your current Cooking level (shown in red)
Anything higher than 25 points will not show up in your Discovery pane.
But yes, as you’ve discovered, Chef creates a lot of intermediate cooking ingredients that may not be used till well into the future. No real way around this other than buying some extra Bank tabs to store them in, unless you’re happy to just sell them now and purchase what you need from the TP when you are high enough level to discover them.
edit Had a problem with items I needed for certain recipes on the wiki not appearing in my discovery pane.
But apparently some recipes require you to acually purchase a recipe, you can’t ‘discover’ them. That’s why then I guess But I wish it said so somewhere – doesn’t say so on the wiki, I only found out by one little mention of ‘Requires Recipe Item’ on one website that isn’t even an official GW2 info site sigh
