As the title says, my question is simple: does experience earned via crafting count for the completion of the monthly achievement “earn xxx experience without dying”?

Not sure about crafting, but gathering exp counts

I’m asking since i’ve just skilled my professions and i leveled up 3 times (26→29), which is for sure more than 25k exp. It has not been counted in the achievement progression which is stuck at the last time i died, so i asked..

Yes. I finished the monthly, the first time, by crafting two levels (around level 60 or so). I, however, do not know if it works after level 80.

You could also run one dungeon :-) That’s 177,000 xp in 20 minutes for CM, monthly completed! But it is an interesting question….

I am pretty sure it is. That is the only thing that could have been responsible for a big enough chunk of exp for when I finished mine for this month.

As for your particular issue what number is it stuck on for you? Mine was stuck at around 6k short of finish. The bar doesn’t seem to reset if you die, it probably won’t update until you have made it back to the previous number and then go over.
