I know you can only have two active but is it reasonable/feasible to keep switching?
For example I’m hoping to focus on Huntsman and Jeweler but I’d also like to cook. Should I just choose two and stick with those?

It’s not that reasonable to keep switching as it costs a pile of silver. You’ve got 5 character slots, make more characters and have them do the other stuff. You can go to 375+ without leaving town as long as you’ve got a main to supply the mats.

To go from 375-400 you need karma for the rare insignia/dowels so at that point you’ll have to go play the character a little, but that time though you character will be level 20, so it will be pretty easy to run around the low level zones and do events to get the karma you need.

Most karma crafting items are account bound. I use my main that has 10’s of thousands of karma to go buy supplies etc and then just bank them. I did not have to leave town at all to get to 400 on my alt.

I thought they were soulbound? Unless they fixed that in the last patch, in which case, ignore that last paragraph in my previous post.
