Right now I can craft come green items. However as I have progress through my 70’s I had this thought: why would anyone want to buy my stuff once you kit yourself out at 80.

So to my the only viable craft is cooking or artificing(potions). Seem no one will buy armor after a while since they will already have it, but consumables, who would not want to have extra power or crit rating.

So are the other crafts viable or are they only good as you level?

Anything but top-level crafting is ruined by current state of economy. You won’t make money out of it, even though you’ll easily sell your crafts for competitive price in auction house (competitive price is next to vendor price actually).
Nevertheless crafting is not expensive enough to stop you from leveling it. It gives good xp also.
At top level crafted rare items are most affordable way to equip youself. Also legendary weapons in mystic forge will eat thousands of crafted items before you get even one true weapon suatable to be forged into legendary weapon.

make yellows. It’s the only way to make any decent money from the TP. Buy yellow patterns and make those when you get to those 8 rare mat per item stage of each tier of crafting. Instead of using 8, get the pattern that uses 15. You make more money and you get 2-3 times as many levels on discovery. And they actually sell.
