Q:

I am not sure whether I should have two of the same discipline. I have 5 characters so I would have to have two characters with one discipline. I’m not sure if I should give them a discipline that someone else has, but is relevant to them or leave m with one discipline. O think leave them since it would cost twice as much to level them up together and Simone else would be able to craft something better so it’s a bit pointless. I’m not sure though cause I’m new to the game so I don’t know what’s best

Leveling a second character with the same craft as another character is a waste. I advice you not to do it.

Anyone would disagree with this assessment?

I gave each of my characters one unique crafting discipline, then I gave all of them Cooking. If you’ve got high level character and some bank space, Cooking really easy to level on multiple characters.

Regardless of what my other characters’ disciplines are, I always base my disciplines on what profession I’m playing; Thief has Leatherworker and Huntsman as those are the disciplines that he can make use of. I’ll level miscellaneous disciplines on whatever turns out to become my main character.
