AR, where did you go?
The AR infusion will replace the one that is already on the ring. You’ll have to make a +6 or above to get any improvement over the +5 that’s already in place.
There are two different infusion slots that accept two different kinds of infusions on infused rings. See this graphic I made a few weeks back:

The only mistake in the graphic is that you are actually guaranteed at least a +1 new AR infusion per Fractal complete (at least 4 in a full run).
It sounds like you are either trying to place more Versatile Simple Infusions (+5 AR) into the ring when you already have one slotted, in which case it will replace the old one with the new one and nothing will change. Your new AR infusion slot remains empty because it cannot take Versatile Simple Infusions.
Or its the other way around and you are trying to place a new +5 AR infusion into an offensive or defensive infusion slot, which are not compatible.

They should change it so if you have 5 ar already slotted and you use another 5 ar infusion it should auto combine to become 6ar. Or they should allow us to pull infusions out of our ascended gear without the use gem store items. :P
A warning like: “this new upgrade will replace the existing [xxx] upgrade” would be helpful. Infused rings are a bit confusing right now, having 2 different slots that take different infusion types, especially given that most people only ever use +5 AR infusions (versatile).
They should have made it so when you infuse you rings it auto fills with the new +5, they did for all the old ones why not newly crafted ones… answer: gold sink
Yes, they really should make it a bit clearer, because I ended up wasting those only to have to wait to buy a new +5 AR with fractal relics to up my AR so I can do higher levels. Which is where all of this started, because they have changed the amount of AR in the fractals so the higher level ones I used to do and survive doing groups won’t let me even tag along. Oh well!
