Do humans (and all races) get 3 different story lines, through the choices when creating a character?

I created a Mesmer that has noble blood and the story is going in one direction. Then created a thief who was raised in the streets and it follows a different direction. So I created an Elementalist who was raised with common folk, but haven’t played yet.

Are all races like this?

Yes up to a certain point. Then the order stories take over(whispers, vigil, priory).

But yes all races and their starting stories are as you guessed; three different options based on what you choose at character creation that will play out in unique ways.
