What's up with the wing and bird Motifs?
The Seraph took some inspiration from Dwayna, so yeah I can see why there’d be wings.

There are a lot of sources of wing motifs – Dwayna is one (and some depictions of Melandru also incorporate wings, and Kormir’s armour has a wing motif, although that’s probably derived from older deities possessing wings). The Krytan royal family’s insignia is a gryphon, while Ebonhawke, obviously, is another source of bird motifs.
People don’t hate Scarlet like Game of Thrones fans hate Joffrey.

Ebonhawke was founded by the Ebon Vanguard as essentially a mix of a supply camp for Ascalon City and to protect against some unspecified threat Adelbern claimed was to the south. It ended up becoming the last refuge for living Ascalonians after the Foefire.
The Ebon Vanguard themselves seem to have a liking for bird motifs, but it’s not clear where it came from. It could be that Keiran’s unit just happened to choose falcons as their totem, and then proved to be the elite unit of the Vanguard that was then honoured on Ebonhawke’s founding. Or it could be that the Ebon Vanguard took up the bird motif as a carryover from the Eye of the North having a similar motif.
Either way, I’m pretty sure it’s not a general Ascalonian thing from before GW1 – the only Ascalonian thing bird-related I can think of offhand is the King’s Watch monument (a gryphon, and that’s probably because it’s the insignia of the house of Doric) and the wings on the Monument Paragon armour (and virtually all paragon armours had wing motifs).
There may be others I’ve forgotten, but it’s certainly subtle enough that the Ebonhawke gates and name seem to be a reflection of something peculiar to Ebonhawke and/or the Ebon Vanguard, not Ascalon in general.

I would be happier if the wings are more pronounced.. like what the Paragons had in GW1..

The Ebon Vanguard’s motifs are similar to the Hall of Monument’s eagles and statuary.
But yeah the wings on the T3 armor come from Dwayna and Melandru.
The T2 armor looks like the flames of Balthazar, and the mask on the T2 light armor is a reference to Lyssa (though I prefer the Elonian look with the masks on each side of the head)
