There are shielder, pistol, greatsword, hammer, dagger. Randomly generatet, you can trick it with guesting server, or just wait for door close.

I fought a sword guy. They seem to be random though, because I fought both the sword guy and the pistol guy at the monastery.

Yep, it is totally random, waited at monestery for 2 door close, first was champion seconds waas escort, guested to another server again champion .
