Since it’s part of the achievement to kill one of each, how do you trigger these guys to aggro?
If I talk to the balloon pilot I get the escort quests.
A bit hard to get this achievement if you can’t kill them :P
It’s random. When you talk to the balloon guys you’ll get one of three things. Kill some aetherblades, fight a champion, or escort an emissary.
RNG is fun right? To make it even more fun when you actually do get a champion event they champion is random as well. Good luck finding one you haven’t fought already when you’re 4/5.
For what it’s worth by the time I found 30 balloons for the other achievement I’d found all the champions I needed.

Murphy’s Law – if you need escort missions you get champions, if you need champions you get escort missions. It’s just another well designed event, you have no idea who the champions are or which ones you’ve defeated already. Wait until you just need to defeat one more champion and you keep get the some one over and over.
It is not random. You will get the quests in order, per balloon. Pick a balloon and wait.
Also, the type of the champion will not repeat for the same balloon until the other champion types were defeated, so it is not random either.
I don’t remember the order of the events, but it might be like this:
Escort, flying ship, champion (and repeat, being a different champion each time).
I camped the balloon in Queensdale that is closer to the Monastery and that’s how I got all the champions.

I bypassed them by doing everything else. I seriously got tired of the Champion of Infinite Launchtornado and the Champion of Stay-the-kitten-down. Regardless I got my Watchknight.
usually, you can see the Champions spawn near by and chilling as well as Green NPCs. that way you know which Champ will be up next after the cycle of morale, emissary, champ (iirc).
defs bring stability, etc when you fight ’em lol.
Try and fight them in a populated map like Queensdale too. Having other players around to help fight the Champion can make it a lot less annoying.
Speaking of which; What does the Blazing Gun guy do to knock me down? I just sorta blow up, but I don’t see him drop bombs or anything.
No idea, but it seems to be a mechanic to stop players just smacking him in the face at point blank range, which negates a lot of his special abilities. Of course, if you have stability, activate that and whack the stuffing out of him for as long as the stability lasts.
