Is it still possible to do all the achievements for this? I have found guides talking about completing different levels of the tower but all I have been able to do is destroy the tower and do it over and over if I ‘revisit the nightmare ends’.

No, the insides of the Tower are no longer available, seeing as the tower is destroyed.
