Hey Jason, and welcome to GW2! This is really the game with the most friendly community i’ve ever seen in MMO. The reason no one has answered your question yet is you have posted in a wrong section of the forum. This section is for the personal story only. If you have more questions better try in “Players helping players”.
Now, about what’s useful for a new player and can be bought with gems: first, I’d suggest you to buy gathering equipment as quickly as possible. Harvesting Sickles, Logging Axes, and Mining Picks are available from most NPC merchants and will allow you to gather valuable crafting materials and earn experience from the world around you. But if you buy them from a merchant you have to do it constantly because you can have equiped only 250 at a time and you should watch your level, because there are higher types for higher levels. If you buy them with gems you can use them unlimited times and just forget about buying new again and again.
Another useful thing is Copper-Fed Salvage-o-Matic, so you won’t need to buy salvage kits from the merchants every time you want to salvage something.
You can also buy XP boosters if you want to level up faster.
And of course, you can just excange some of your gems for gold, so you can buy for your asura the best armor and weapons for your level from the Trading Post.

The unlimited tools (although I think the Dreamcleaver Axe is no longer on sale by now) and the Copper-Fed Salvage-o-Matic are excellent purchases, in my opinion. Permanent and offer lots of convenience.
Alternatively, you can’t go wrong with more Bank slots or Transmutation Crystals (you’ll need plenty of the latter once you’re level 80 and want to get a specific look on your character).

BTW, I went with the +1 Bank Tab and the Copper-Fed Salvage-o-Matic. I couldn’t find the unlimited tools. Those sound good as well. At least the Salvage I tended to bring more than one because I salvaged everything, since most stuff is apparently garbage otherwise.
