I’ve only now started my first alt and due to aesthetic reasons I chose the same race (Norn). I was pleasantly surprised that the personal story for my character was different from the start, but how far into the game do the personal stories stay different?

Are they going to converge into the same path for all classes in the end or is each race/class going to have their unique storyline from 1 to 80?

Each race starts at the end of a branch, and eventually converge into a single line that every character follows.

At 30, your racial story ends.
At 60, your Order story ends.
At 80, you end your story.

So practically the story missions (with some choices, of course) for 60-80 is same for everyone, regardless of race, class or choices made in the character creation?

Yes, that is correct. No choice you made matters after you are finished with your Order storyline.
