falling three stories to my death while inching my way to a Vista and getting called for a double-tap on a movement.
There is an option to disable that. I often do when I’m making my way to a tricky vista or especially difficult jump puzzle, because I’ve made the very same mistake.
I’ve been defeated by the ground many times; and, those many times have been voluntary deaths.
Bind dodge to a key. Bonus: you become a better dodger.
Sounds dodgy to me.

Does anyone feel a lack of immersion or reality in games that lack falling deaths from great heights?

One thing that I use to screen out games before playing is if it uses “falling to your death and starting over” as a replacement for challenge.
I appreciate any game that saves me from that irritation and makes ledges not accidentally-walkoff-able. Because in reality, I wouldn’t accidentally walk off a ledge. It’s only camera and icky controls that cause it to happen. I’m just glad in GW2 it’s not required to do these. And only about 3 that I’ve tried were so bad that I got angry at Anet.
I used double-tap for the first couple weeks I was playing, until throwing myself off a platform several times doing the Goemm’s Lab puzzle. Rather than switch it on and off all the time, I bound it to one of my two left-side mouse buttons (put weapon switch on the other one), and it works great.

Honestly to have any semblance of reality it would need to be way different to how it is now, anyway.
I think the worst though is that recently I seem to be able to get killed by slopes, too. I’ve bloody near killed myself walking down stairs. xD
Yeah, if you jump on the rail of the huge stairs in Divinity’s Reach for example, noticed that too. But you can stand in fire.
