To check all Crafting levels on a character
You have 5 character slots and 8 crafting professions. What many people did is put one or 2 per character. Then you don’t have to pay to switch and you can see each character’s crafting level.
Edit: if you don’t have crafting maxed out you would be better off putting it on other characters. iirc, it costs 40 silver to switch between maxed crafts each time you do it. It’s not likely ANet is going to change the way they have it set up at the time. You would be better off cutting your losses and farming out the crafts to your alts.

Astral, you might be missing the point…
Crafting is a good way of levelling… I have 8 characters on one account, each with more than 2 crafts. I’ve had to go back and switch one of the 400 level crafts on a character (say, I wanted Leatherworking 400 but even though I’ve done it on a few, due to the order I crafted, none of them had it as one of the two visible crafts).
I don’t mind the cost of changing profession on one, and paying the 40..
..and it is possible to see what crafts that a character has by going to each of the crafters and seeing what it costs to switch crafting professsions (ie: 40s means the toon is at 400 in that craft being switched to, not the current craft).
It’s just a big pain in the keester, and having the pulldown show the level in () and “inactive” (or the like beside that type) would save a lot of time trying to keep track of them.
So, I guess that’s my suggestion
Or, an “overall stats” pane, accessible from the character selection page, to review stats, professions, etc of any toon before selecting.

To clarify further, in the crafting panel:
Leatherworker(400)
Chef(363)
Huntsman(400) inactive
Weaponsmith(350) inactive
Artificer(150) inactive
…
Ok. I see what you mean. However, since its exceptionally unlikely that ANet will change this anytime soon then your best bet is to either write down the levels on each or get to max level crafting one at a time. If and when they ever change it, it will be a moot point for you. ^^
You can get a summary under Hero->Achievements->Tradesman and you can view all crafting levels across your account.
You can’t tell who’s got what but at least you see all your crafting levels.
