Hey guys this question might sound a little silly, is Tixx’s Infinirarium, The Grove an one day event?

I’m confused about it because Tixx will visit every major town from 15th to 20th december, so does it mean once he moves to the next place the previous dungeon/instance will be unavailible?

No, you’ll be able to do it again once tixx reaches lions arch and will be able to do it as much as you like up until wintersday ends on January 3rd.
