Rather than simple stat increases, the enemies definitely need more attacks to make them interesting, most enemies in the game have less than three attacks not including environment effects.
It’s pretty disappointing to see trash pose more of a challenge than the bosses of the dungeon.
Easiest fix would be to lock players out during wipes, either through an actual lockout or an excessively long run back. Honestly, one if the biggest boons a tank brings is the ability to prevent a wipe from ever happening simply by keeping a boss in combat indefinitely.
Some parts of the dungeons with non-combat elements are really fun. I hope there will be fights besides “dodge, dodge and dodge”.
I agree with you, most of the more enjoyable boss battles I faced involved some mechanic that players had to learn and use their skills to accomplish, like Baelfire in CoF Story mode. I really like the idea of switching between underwater and ground combat mid fight. Not sure if it can be done in the game, but it would make for a really interesting battle.

There are a couple really good ones. But sadly most are afk giant health pool fights. Anet has awesome moments in dungeons, they just need that across the board, instead on only once per dungeon.
