I read the Flame and Frost information and it says we are now able to select your own daily achievements, Can someone tell me how to do that, I checked the forums for info, and can’t find it.

With the february update you will be able to do so. Hence right now your question can’t be answered because choosing what daily achievement to do is not enabled.
