I realized too late that the gear color should have been chosen during the character creation, so I’d like to ask if it is possible to change it without creating a new character again. I’m now with a lvl 8 human necromancer and I’d like to go on with that.

Yes. Open your hero panel (press H), and in the top left above your armour slots is a little eyedropper icon, click that and you’ll go into dye mode where you can change your armour dyes freely.

As the game goes on you’ll likely find or buy additional dyes too.

That’s a huge part of the game. You will find many unidentified dye in your travels (both from killing mobs and from harvesting plants) and certain dyes have different levels of rarity. You can even buy and sell dyes from the traders.
