Class's-- Would u do it??
Wouldn’t be a bad idea for RPG players. But the Game Mechanics offers no benefits to doing this.
Now if this was WoW or EQ where players were split by alliances and NPCs attacked/KoS based on your alignment then yes this would totally work.

Dude… you have been playing Ragnarok Online haven’t you?
While I love the idea of having to chose a direction for you class, I disagree with the good/evil/neutral directions. I also disagree with the whole “start everything over”.
Instead, this could be done by choice of order alone, by adding order specific elite specializations.
It is however something that I strongly doubt we are going to get. At best, we’ll get order specific skill graphics. It would simply be too much balancing to try to make that many new classes.
Leave it to A-net to decide whether the suggestion is possible or not.
They’ve already added the “Specializations”, which is a clever way to adjust your class to a different one at any time. Adding another class-changing option would simply be too complicated for its own good.
I do like the good/neutral/evil suggestion. To be honest, I expected GW2 to have it already when I bought it – simply because of the personal story. It seemed pointless to me to have a personal story where every choice you make ultimately adds up to you killing Zhaitan. Could you imagine how cool it would be if you were able to join him?

No, I cannot imagine that would be cool in any given way. I would find it game breaking and completely out of place. It simply would not be guild wars if we could be evil.

This sounds an awful lot like going for prestige in Call of Duty or Marvel Heroes and I don’t think this game is built mechanically for that. Especially with the specialization system, they could just introduce new specializations that would work similarly in the way you describe. I also don’t think people will want to do map completion more than a few times.
Guardians gain a Monk specialization with more healing focus, or a Warrior gains the Paragon specialization and gets to use spears on land. It’s the same general concept that you mentioned, but without restarting from level 1.
Also, most players would just buy a new character slot to redo map completion. Recycling is often not considered since if you restart your character, you lose the next year’s birthday gifts.
Not hating on the idea, but there needs to be some other benefit that I’m not seeing that isn’t covered by the elite specializations or just outright buying a new character slot.
Also, as for joining Zhaitan, no. I don’t see the point of playing an evil character in a game where I am clearly a hero. I think they wrote themselves into a corner with the personal story. Try writing a choose your own adventure novel. It is a lot harder than it looks, especially when you have to take into account every possible action that a player can take. That’s why for most of the personal story, our choices boiled down to: do you want to go with option 1 or option 2, with the rare option 3 thrown in and it all ties up nicely with Zhaitan’s defeat at the very end.

How can half the players join Zhaitan and the other half kill him in an MMO? That’s the kind of thing you can do in single player/co-op games but not MMOs. The entirety of Season 2, HoT and Season 3 are based on that single story thread “Zhaitan’s dead, lets go kill another dragon!”
As for the OP are you basically suggesting that they add a load of new professions? I don’t think that’s even remotely feasible. They have a lot of difficulty balancing the 9 they already have. That balancing is harder with the 9 elite specialisations they already have. Another expansion will likely add yet another 9 elite specialisations.
Either way effectively deleting a character and starting from scratch doesn’t sound like fun to me. Map and world completion isn’t hard (or even that interesting past the first time) it’s just time consuming. If you want to restart at level 1 then can just delete an existing character or buy another slot.
From what limited lore I know, this would completely break lore. I’m sure a qualified lore person would agree and articulate why this will never happen. Also, limiting professions to a side is a really bad move… There are a ton of other reason for a “no go”, but those 2 are enough to shut the door on the idea.
Now if you had GW3 with something like the pact side vs the white mantle side vs the dragon champions side… that’s doable, but this “make orders good, bad and neutral, and limit profession choices” will never come to pass.

I feel like I generally don’t understand the OP’s suggestion. I disagree with the three orders being labeled good/neutral/evil, I’m not sure how class alignment with the orders is supposed to work, and I’m not sure if the OP is suggesting that Paladin, etc. be new classes, or simply new labels on old classes that indicate your reset path.
I’d like the option to replay personal story missions, but I’ve never wanted to reset a character rather than making a new one.
I don’t really see how this would improve players options, why not just make a new character rather then resetting your current one?
Also your idea of good/evil/neutral for the orders isn’t accurate. What makes the order of whispers evil? Why is the priory good? Why is the vigil Neutral? All three orders are dedicated to their causes, none of which are inherently evil, good, or neutral. Also defining your alignment by your class in the GW2 world wouldn’t feel right to me.
I do actually prefer some of the class names though, I like paladin more then guardian.
You called Order of Whispers evil? My beloved order? Excuse me??
Didn’t like remort class idea when i first seen it (which was long before RO times), and i still do not like it. And as for good and evil divide – a game needs to be designed for it from the grounds up. This one isn’t.
Remember, remember, 15th of November
You called Order of Whispers evil? My beloved order? Excuse me??
If I had it in me at all, I would also be a little insulted about people calling the order of whispers evil.

An attempt to insult what cannot be insulted.
The maximum rank for an agent of whispers in gw1: “Holy Lightbringer” – Just saying that gives me the chills, gewsh!
It is in practice an order dedicated to fight the Nightfall… I mean, really…
I want to know how this sounds evil to anyone… xD
