I think the trolls have a fire shield that burns you when you hit them or are close to them. You don’t need to stand next to them and melee all the time though and the shield will eventually expire. If you’ve got time to prepare you can also set up some skills for indirect damage such as traps, caltrops, or summoned thieves.
Destroyer trolls have a defensive stance in which they stand still and do not attack. For the stance’s duration, anyone who attacks them receives the burn condition.
To independently verify my claim:
- Find a Destroyer troll.
- Get into aggro range. Do not initiate combat, but get it to chase you. Try not to aggro more than one as that will complicate the experiment.
- Run around until it stops and goes into a crouching stance. They normally do this very early in the fight so it should not take long. Once it does so, strike it once. [ 1 ] You will burn. Immediately stow your weapon [ 2 ].
- It will eventually leave the stance and run towards you. When it does so, strike it. You will not burn.
- Repeat until you are convinced.
- Profit
I used to get destroyed by these things until I figured this out. Now I troll them just because I can.

[ 2 ] If you have not set up a keybinding for stowing weapons, do so because there is no binding at all by default. Hit F11, go to the Control Options tab, scroll down to the Miscellaneous section (at the bottom) and set “Stow / Draw weapons”.
