Exotic vs Ascended difference in %
Wiki that info is the best way to verify yourself. If you are questioning if you should get a ascended item go for the weapons first since those are all you really need. The stat/armor increase on ascended items is minor but the weapon damage increase is noticeable.

Consider the fact that exotics have upgrade slots and ascendeds have infusion slots. Infusions have very little bonus while upgrades have huge. Upgraded exotic vs ascended have a small difference (the 5% might be accurate). But I don’t have exact numbers, maybe someone else can help you with that.
Uh… Ascended weapons have infusion slots AND upgrade slots. And unless the wiki is blatantly lying to me the armor retains it’s upgrade slots as well.
First, lets devide this into 3 groups.
1. Weapon
2. Armor
3. Accessories (Jewels + Backpack included)What I would like to know is the difference in percentage for each seperate group.
Example, if I use Exotic weapon, armor and Ascended accessories. How much will my character gain in strenght?And at last, how much is the difference in strenght betwen full Exotic and full Ascended gear (weapon, armor & accessories)?
/note: People says it’s 5% but if you compare the Exotic gear vs Ascended gear you can see that the stats difference is around 10-15% per item.I seek verified information with proofs.
There is no single answer. The number change based on profession, build etc… I’d say on average its about 10%. People say 5% because instead of just considering the gear itself the consider it holistically. In Gw2 states are 1/2 provided by your character 1/2 by your gear so when equiped a 10% gear improvement will result in an overall advantage of about 5-6%
An Ascended Weapon has 5% more damage as seen here:

In the example the wiki uses a level 80 sword:
Exotic damage is 905 – 1000 while Ascended damage is 950 – 1050 that’s 5% more damage for the Ascended version.

Taking the Sword example (one-handed row) it gives:
Exotic: 90/64/64 and Ascended: 94/67/67 so Ascended gives 5% more of each stat
The damage formula is below (http://wiki.guildwars2.com/wiki/Damage):
Damage done = (Weapon strength) * Power * (skill-specific coefficient) / (target’s Armor)
If we keep armor and the skill coeffiecient the same and use the same sword as an example:
At level 80, full Ascended vs full Exotic damage:
Full Exotic Power (Berserker stats): 1003, full Ascended Power: 1087, stats at level 80: 926
(905 – 1000) * (1003 + 926) = 1745745 – 1929000 for Exotic vs (950 – 1050)*(1087+926) = 1912350 – 2113650 for Ascended, that’s ~10% more damage
However, the skill coefficient can be higher than 1.0 and the damage is multiplied, so Ascended damage will scale a bit higher, but still won’t go over 10% more damage.
Also note, Ascended weapons can deal less damage than Exotics on some rare hits (RNG based)

As for other factors:
Precision (Berserker gear)

Critical Chance = (Precision – 832) / 21.16
Base Precision is 926 (http://wiki.guildwars2.com/wiki/Attribute) at level 80 which makes the formula: (Precision from gear + Traits + 103) / 21.16
According to the table: http://wiki.guildwars2.com/wiki/Equipment#Attribute_bonuses
Exotic Berserker gives 698 Precision which means (698+103) / 21.16 = 37% crit chance without factoring in traits, runes and sigils.
Full Ascended equipment will give 745 points of Precision making the formula:
(745+103) / 21.16 = 40% so +2% crit chance overall. Note that if you only change the weapon to Ascended, you get +3 Precision which isn’t enough to give you any crit chance by itself.
Critical Damage
You get +1% crit damage for every 15 points of Ferocity, while you don’t get any Ferocity bonus from your level (the 926 points, you get a fixed +150% critical damage by default)which means at level 80 using Berserker gear again:
Exotic is 698 / 15= 46% Critical Damage while Ascended is 745 / 15 = 50% Critical Damage, that’s 4% more critical damage. Note that if you only change the weapon you get no Critical Damage bonus at all.
In my very humble opinion, using just one or two Ascended pieces isn’t worth the cost. A Full Ascended set gives ~10% more damage and the individual piece gains give less than a simple damage trait, or a rune or whatever.

This thread kicked my butt, so I went ahead and did the spreadsheet I was procrastinating. So far, I’ve done all armors and trinkets (+backpiece*).
*: Celestial will be done shortly, gonna craft myself a 78 backpack for greater science!
I return (with a double post). Haven’t done weapons (doubt I will) but here’s the Trinkets and Armors stats.
Just some notes:
Trinkets Tertiary and Quarternary stats are only on Ascended. For the Exotic versions, I put Gem information,
If you want the appended version, as long as you have Primary/Secondary/Secondary stats, you have a:
Amulet:
9.57% Primary, 7.59% Secondary Improvement
Ring:
11.96% Primary, 7.94% Secondary Improvement
Accessory:
12.35% Primary, 9.09% Secondary Improvement
Another note: Celestial Backpieces have no equivalent Gem. This is why the stat gain from Exotic to Ascended is so significant (hard to count a gem, but off the top of my head the answer would be: 21.74% overall stat gain using a level 65 Jewel.
Exo3/4 on Backpacks are Crafted Backpacks and use a level 65 Jewel.
Tl;dr: (or couldn’t understand mah pictarz, which are outdated by the time you read this)
Shoulder/Gloves/Shoes have the most stat gain from Celestial Exo→Asc.
Pants have the most Primary stat gain from Exo→Asc.
Helm then Chest have the most Secondary Stat gain from Exo→Asc.
For the most part, Light armor users gain the most percentage in armor from one item to the next (bar pants).
Celestial Trinkets were borked. Appropriate numbers are:
5.56% Amulet.
kitten Rings.
7.89% Accessories.
These all assume you are using Celestial + Celestial Jewel.
