Expansion - Hard to obtain equipment variety
Why is Eternity mentioned as “currently the only one of its kind?” It’s the third (or second-and-a-half) legendary greatsword.
People would certainly like more legendary weapons, which is why H.O.P.E., Nevermore, Astralaria, and the new shortbow were meant to be part of a new set of legendaries to get rolled out as part of Heart of Thorns. Regardless, the project was eventually deemed a poor use of development resources, so the other legendaries are indefinitely suspended.
As for armor, I think people would just like more armor skins, regardless of whether it’s ascended. Take Leystone armor—If it had been ascended, it would have to be substantially more difficult to acquire, and I’d have maybe one set instead of a full collection.

They intended a new version of every legendary weapon (except for underwater ones) as part of HoT. They intended that each of these have a lengthy thematic quest/collection line to make the precursor. It turned out they didn’t have the resources to do this.
So yes, it would be lovely to have more choices in the looks of top-end gear. And no, it’s not going to happen at least in the life span of this expansion. Which will be a whole new can of worms if they do add more that you can only get after you buy the next expansion, so they’d have to integrate it into HoT without requiring any new expansion stuff to complete the weapons, thus reducing the profit margin on the work tremendously as well as keeping people from having more reasons to play the new content.
I agree on just wanting more armor skin choices without needing them to come decked out with BiS stats. A transmutation charge is way easier to get than a piece of ascended armor. Though assuming the legendary armor, when completed, will have the same wow! factor as the weapons, I could see wanting 3 armor options in each weight, gathered via raids, wvw, and non-raid PvE so as to allow as much choice in play methods to acquire them as possible.
It’s because nothing will ever be as cool as Bolt. Hands down, every time I see someone running with it drawn, it reminds me of the WoW: Wrath of the Lich King: Halls of Lightning boss
