Getting back to GW2!
1. What is the leveling experience? Is a good experience and something that can be enjoyable?
You have more opportunities to level now. There’s still map completion and WvW. Leveling by crafting got nerfed a bit when they added ascended crafting to now you only get 7 or 8 levels per craft when going to 400.
Another popular way to level is by doing the karma train in Edge of the Mists. PvP also got reward tracks that award tomes of knowledge which is each to one level. You also get some through the daily login reward system.
The experience isn’t what it used to be as they’ve locked out several systems to make it more palatable for new players. The trait system also got overhauled. You now have to spend a ton of gold plus skillpoints to unlock the traits or go and do various tasks to unlock them. This is unfortunately all character bound so you’ll have to repeat this over again for every new character. According to a post from Anet, they’ll be reworking this for the expansion to be something like the mastery system that will be released with it.
2. I played a bit before, but delete my low level characters for the free transfers and a fresh start. I was just wondering how the servers are in GW2? Is there any servers that is better to chose or is all mostly the same when it comes to population?
I believe all of the servers are the same as they were before in regards to WvW. Server doesn’t matter much for PvE as we now have megaservers.
3. Is there any "class’ " that are better for diffrent things? I haven’t researched them that much, so was just wondering if they all had some very specific roles or if they can do diffrent things?
Some classes perform some things better than others. Just remember that all classes in the game are viable so choose the one(s) that you feel you would enjoy and match your play style.

It’s absolutely true that you should look for the class that you find fun. That being said, here’s some info on the state of things:
For now, necromancer is under-performing in PvE. Anet is making changes to address this by changing how conditions function, but it’s certainly something to be aware of.
However, necro is really strong in PvP right now. Engineer is probably considered “meta” in PvP, and ele is not far behind.
Elementalist is strong in all three modes (pvp, wvw, pve), but it’s also the profession with the highest risk/reward ratio.
Ranger and thief are good for roaming in wvw, I think, and that’s pretty much the extent of my knowledge of wvw. Thief has it a little easier than ranger in group-pve content, and they’re about high-middle of the pack for PvP. Ranger is ideal for solo pve.
Guards and warriors are ideal for just about anything pve.
I am not well-informed about mesmers. I know some people who play them incredibly well. And, ultimately, a well-played non-meta profession is preferable to an unskilled meta profession, in my opinion.

I should also mention the new trait system is going to be changed, but we’re not sure how yet. The trait system, by far, is my least favorite of all the updates to the game. It’s going to go but no one can tell you what will replace it.
There have been a ton of positive additions to the game to, including an account wallet for most currencies, a wardrobe which makes it easier to get the right look for your character, dyes have become account bound, and the camera has new view options including a POV slider.
I will also mention, depending on how long you were gone, if yo already had characters created, don’t delete and re-roll your grandfathered into the old system.
