Either delete characters or buy more slots. Those are really the options.
You can buy extra character slots in the gemstore. But it’s pretty expensive to convert gold into gems.
or if you plan to make more then another 5 alts it might actually be more cost effective to buy another account when the game has 50% discount.
Extra slots are 800 gems or $10 worth. They occasionally go on sale.

Firstly, I would like to welcome you to Guild Wars 2
It’s true that you starts with only 5 slots but you can purchase more slots from Gem Store and you can have up to 64 slots. In this game we can convert Golds (in-game normal currency) to gems (micro transaction currency) and it costs an average of 100 Golds (800 Gems) to get a character expansion slot. It’s really not that hard to obtain 100 Golds later on.
As for trying out all classes and choosing your favorite one, I would highly suggest you to create a character and visit an arena on PVP as when you are on PVP, all your skills are unlocked and your character is set to lv 80. So, using this method, play with all 8 classes (by creating one and then deleting it afterwards) and stick with the one which suits best with your playstyle.
Eventually when you hit lv 80, it won’t be hard to farm a character expansion slot and it will take a maximum of 1 week to farm 100 golds from end-game contents.

You would actually only need 8 slots for one of each Profession. =)
