Gems, lots of gems. With those gems there are MANY things to buy, character slots, digital deluxe edition upgrade, skins, unlimited gathering tool (the only “debatable” must have item), and converting to gold. And those are just a few options.

Yup, just sink it into gems each month. Gems don’t expire so you can just hang onto them if there isn’t anything you want to buy right away.
Personally I tend to spend gems on more bank space, new character slots, bought a few of the unlimited harvesting tools, and several of the armor skins.
Lots of other stuff on there if you want though. Can even convert straight into game gold if you so desire, but I don’t really consider it worth the exchange rate personally.

I would recommend getting additional bank tabs first, and a character slot if you need one. I hear the unlimited gathering tools and the copper-fed salvage-o-matic are extremely convenient.
Beyond that, it really is just a matter of taste. If you’re dedicated to putting that much money into the game on a regular basis, eventually you will probably just be able to get anything you like. Keep in mind there are faces, hairstyle, and hair/eye colours that are only available by using a gem store makeover kit.
There are also some pretty great armor skins that are only available in the gem store. And if awesome-looking weapons are your thing, consider that some can only be purchased with Black Lion Weapon Tickets — and you can only get those from Black Lion Chests. You aren’t guaranteed to get a weapon ticket, or even a scrap, from every chest you open — but if you keep at it you’ll eventually accumulate enough, and in the process probably have quite a collection of boosters and other exclusive items.
If you aren’t in a rush for any particular thing, you can also just save up and buy things as they get discounted.
