Actually, Role-playing is the origin of the game you are playing right now, specifically the Dungeons & Dragons pen and paper game made in the 1970’s.

The wikipedia link has o lot information, but it’s pretty hard to understand.
As for easier explaination:
Role-playing is getting into a character role. You act like your character would do.
You are no longer acting like a player, you are this character.
You talk like this, use emotes to show emotions or states (like sit, sleep or ANY action via /e emote).
If you are from US you have propably heard of Dungeons&Dragons. If you are from European country then maybe Dungeon&Dragons, Warhammer Roleplay, Call of Cthulhu or some other pen n’ paper role-playing game.
It’s exactly the same, just that you role-play in game using chat and emotes instead of talking to friends in pen n’ paper rpg.

I found a great source of information for you. I used it back when I started to role-play in World of Wacraft. Whole “The RP Survival Guide” has nothing to do with WoW so it applies to GW2 too (and any other MMO).
