I agree, leather is very difficult to farm compared to other materials. This needs to be addressed.
It will change sooner or later, either because Anet do something to balance it or because demand changes.
If I remember correctly it was a year ago at most they were adding more sinks because Thick Leather was virtually worthless again.

Cloth and Leather are primarily supplied via ambient production by all players. This means that while total production levels are higher than the need overall, they are not enough for any individual player to satisfy an immediate need forcing you to interact with the Trading Post.
This is contrasted with easy to produce materials like Ore and Wood that allow any player to satisfy their own need keeping the prices very low.
This is actually a GOOD thing as it allows some materials to have value. You’re mad today because you are a buyer, but if you weren’t currently working on a project you would be selling the leather and then you’d be happy because you were a seller.
Bloodstone fen is a small but non-zero step in the right direction. Many of the salvageable materials there give a random tier of leather. It’s not a lot of leather being generated, but it helps.
I cannot stand this argument that people use to defend the prices of leather. Yes, its good that some materials have more value than others. Not very many people will argue with that. But that doesn’t mean that the price of a material has to be either dirt cheap or very expensive. The price of leather is much too high compared to other materials of the same tier, it could be toned down a bit and still hold more value than other materials.
I mean come on. According to gw2efficiency right now:
T5 refined leather selling for 10.23 silver a piece
T5 refined ore selling for 98 copper a piece
T5 refined wood selling for 7.09 silver a piece
T5 refined cloth is selling for 2.53 silver a piece
T6 refined leather – 77.64 silver a piece
T6 refined ore – 7.9 silver a piece
T6 refined wood – 24.8 silver a piece
T6 refined cloth – 1.33 silver a piece
Clearly ANet could do something to drop the price of leather by 50% and it would still be the most expensive T6 mat and the second most expensive T5 mat by far. There is a huge in between where it could settle other than the two extremes that people like you pretend are the only 2 places for leather prices to settle at
