Levels are usefull?
As you level you will unlock more areas and more dungeons. You are downscaled when you go to a lower areas or lower dungeons so that content stays relevant (but you get rewarded for your true level), that’s probably what your friend was talking about.
Also in structured PvP you are always boosted to 80 with max level gear, stats & abilities to make the game fair.

Levels do matter. Just not as much as in most games.
No my friend says +3 stamina is the same as +50 in w pvp. so i die really quick in pvp with gear but i thought gear levels didnt matter?
You will die faster in WvW (which is the only PvP in the game that takes your real level and gear into account) if you are not lvl 80, but you will still stand a chance against a real lvl 80 if you are skilled enough.

It depends on what your friend was referring to. In WvW you are leveled up to 80. While that is nice and all it isn’t as great as it seams as you won’t have all the traits and gear stats to help you out. From my experience going into WvW at low level is like wearing a sign that says, “Hey there! Kill me first.”
In PvE levels do matter as you explore and go to higher level areas you will indeed need those levels. On the other hand if you are higher level than the area you are in you are down leveled. However that is not a bad thing as you will still have an advantage. As mentioned with dungeons and a fair amount of the living story updates you will want to be at a level appropriate for them.
While it may seem tempting to race to L80 as fast as possible I suggest taking your time to enjoy the content and level naturally, at least with your first character.
In PvE, your level matters but if you’re a high-level character in a low-level zone, your level will be temporarily set lower so you don’t kill everything in one hit (usually).
In WvW (open PvP), your level matters but your character’s base stats will be boosted to level 80. That’s still not as good as being level 80 with full traits and top-tier equipment, but you won’t die in one hit (usually).
In structured PvP, your level does not matter at all. All of your character’s equipment will be equal to everyone else’s even if you are only level 1. You can have any gear you want for free, but of course it can only be used in structured PvP. It’s one of the greatest features of GW2.

Funnily enough usually one of the busiest zones are Queensdale, which is definitely not a max-leveled zone, while most of the max-leveled zones are indeed quite deserted most of the time.
And no, you won’t die instantly in WvW.
