Lowest skill cap profession?
lol thats easy… want a super easy noob class? roll a ranger with a longbow and just stand at the back /yawn and pew pew easymode u need no skill for rangers at all lol
From my brief play around with it warrior seems like the easiest to learn to me because most of their attacks are straight-forward damage dealing moves and their profession specific mechanic is pretty simple.
But I’d still say she should go for whatever seems the most fun, because IMO that is more of a deal breaker.
If she’s played Pokemon (depending on how much she got into it) there’s a good chance she’s gotten her heard about some pretty complicated game mechanics already, so nothing in GW2 should be impossible to learn.

Warrior or Ranger
Guardian or ranger.
Range is easier then melee and rangers have a pet that does the work for you. So I would get her to try the following and see which she has the most fun with
Ranger
guardian (as it can take lots)
warrior (same as above but with some range)
It’s less the “skill cap”, as even people I know (both genders) without any gaming experience at all can learn the basic controls, find their way around reasonably well, and be able to survive in the open world in a couple weeks at most.
She could start with a profession that’s a bit more forgiving and durable, but that’s not truly necessary. The three recommended ones above, Guardian, Ranger, and Warrior are all like that. All three can clear out trash mobs well, all three can take a bit of abuse, and all but Guardian have very effective ranged capabilities to emphasize the importance of switching tactics.
Even if she chooses Elementalist, after the first few weeks of learning, she will do well enough to survive without too much trouble. A guildmate’s wife is playing her first game, period, and made an elementalist. After a month’s play, she’s doing explorable dungeons and doing quite well.
Just let her choose, make her own decisions, and be patient.
For PvE and WvW? Ranger.
Warrior. As for why? They’ve the highest base health in the game, soak up a lot of damage due to their heavy armour and dish out a pretty hefty amount even with traits all over the place.
Ranger.
Although if she wants fun, she needs to do what all the cool kids are doing and roll a Mesmer.
Is this even a debate? Greatsword Warrior, hands down. Roll 5 signets and one shot everything on your way to 80. Yes, you start to lose effectiveness after 50, but its still a mindless, one-button build that shouldn’t in any way be as effective as it is. And if kitten goes down, you have a 5 second invulnerability and a slew of other tools to keep pressure off if need be.
Guardian is pretty easy, but that’s only because of the content, not because of the class. When you get into tougher content, Guardian’s need to manage a lot more abilities (timing blocks, keeping up blindness, judicious use of Virtues, wisely using healing abilities, etc. etc.) that make the class significantly more complex. And no, I’m not a Guardian main, yet…
It boils down to what you make of it. There are builds for every class that are more active or more passive, depending on what you choose. How deeply you decide to learn your class is what makes the difference between casual players and the next level. Its pushing buttons. Anything is easy if you take the time to learn the basics.
