If I were to throw my ascended sword into the forge to change its stats from Rabid to Berzerker, do I also get skin change or is it just the stats that change?

Forging creates an entirely new weapon (Zojja’s sword in your example). The Zojja skin would be unlocked if not already so.

You will get the skin as well, the MF “stat change” actually gives you a new sword, not the original sword with stats change.

Yes, you unlock the new weapon skin. I’ve been doing this personally whenever I craft a weapon – craft a cheap version I have the recipe for, then mystic forge it to the more expensive version I don’t have the recipe for.
