Need help with character!
Dual guardians imo.
They are very survivable, do reasonable damage and are easy to play. They are seen as a support class with good dps output. The kinds of skills that the guardian has are also (imo) particularly useful with learning to play the game in terms of boons/buffs, combos, blocking etc.
On the other hand, I would avoid elementalists, engineers and thieves if you’re not/your gf’s not particularly adept at videogames. These classes are more complex and difficult to play- elementalists and engineers have more skill sets to master, thieves can be particularly jumpy and squishy.
I also think doubling up guardians is a good idea, because if one of you have a better feel for it than the other, you can easily help the other along.
Race, on the other hand, doesn’t really matter. The race specific skills are very limited and don’t have very many applications. If you’re really heavily into aesthetics, I would avoid Charr as they tend to have more clipping issues than the other races. Other than that, choose what you want- just make sure you choose the same race because you start in different areas and have different story
Every race is equal except Norn and Charr will have more camera issues in tight spaces.
If she’s new to MMO controls, don’t have her play Engineer or Elementalist. Warrior might be her best start until she learns more of how to maneuver and use skills. That or Guardian, with all the damage mitigation and blocks available.
Both of you should practice dodging. Try it while running around in a safe place to get used to how often you can do it and how it moves you, then try using it every time a mob does a channeled “big hit coming” animation. Dodging is a key element of survival in this game.
Beyond that, don’t rush her. If she wants to sit and listen to the full loop of kids at play, let her. If she wants to climb a hill for the view, let her. There’s lots of hidden gems tucked away in the game, and getting to them helps you learn the mechanics without missing the journey along the way.
I’d go guardian for you and ranger for her. As you level, the three downed ability on the ranger will allow her pet to rez her when she’s down. It’s a bit like a get out of jail free card. You can more or less attack first and she can sit and plink stuff from a distance with arrows, while you take the brunt of the attack.
Her pet will draw some aggro too.
Give her the options and tell her the pros and cons. Then let her decide what class she wants to be. That’s what class she should pick. The class she believes is right for her. Not the class you think is right for her.
Recommending a class is fine, but don’t tell her to make a particular class.

Plays with my wife and have 46 level 80 charaters each(all race/class combos). Make sure you/she plays a class/race she likes, that will keep the game fun longer (my wife prefer Azuras, small bundles of energy).
Builds: There are lots of good suggestions for different builds, but make sure you make your own build to suit your own playstyle, to make the game more fun (booring to have to play a certain way to do max damage)
