Not really, unless you want to join a specific guild for WvW or something, because that’s about the only thing bound to a single server. RPing is also more prominent on some servers, but I don’t remember which were the unofficial RP servers. For focusing on PvP or Pve, it really doesn’t matter. There’s still the server language to remember, but those are all marked accordingly.
Other than that, a server in your region might be prudent to avoid lags.

Base your Server-Choice on World vs World. It’s the only aspect in the game where your server matters as you’ll be fighting with your server vs others. Anything else (sPvP, PvE) you can do with anyone regardless of server.
https://leaderboards.guildwars2.com/en/eu/wvw These are the Rankings, usually the higher the longer the queue-times but also overal better quality / intrest in the aspect of the game.
Do note North American and European servers are completely seperrated. Keep that in mind in case of real life friends.

Because this game whats referred to as a “Megaserver”, all the players from all the servers get loaded in together in maps, so it doesn’t matter what server you go for. The only thing effected by your server choice, like Nova said, is WvW.
Guesting however does increase your chance of getting in with people on that specific server, which is good if you’re looking for RP, or specific PVE activities.
RP servers are Piken Square(EU) and Tarnished Coast(NA)
