Will all of them go to Historical once Wintersday is over, or will some of them remain obtainable after Wintersday? Particularly those related to the collection and the 10k drinks one.

They would go to historical but you may be able to still complete those ones. Historical is just a category and I don’t thing they disable achievements from being able to be completed. I could be wrong though so perhaps you may get an official response.
