The play styles of different professions
I can provide input on two classes, the only two I really play. Apologies!
Guardian
-Easy access to AoE buffs: Aegis, Stability, Swiftness, Retaliation (Shouts, Light Fields, Virtues)
-Light CC: Blinds (easy access to blinds via utilites, weapon and profession skills)
-Good direct healing and loot tagging (staff, Virtues)
-Gap closers (Greatsword 3, Sword 2) both apply AoE blind, great for charging into fights
-Decent reflect (Wall of Reflection)
-Amazing loot tagging (staff auto-attack)
Guardian is great for direct combat and party/self support. Damage mitigation comes mostly in the form of applying Protection/Aegis on yourself and blinds on the enemy. Decent at applying CC (blinds, Hammer immobilize) for bosses. Builds can be as diverse as you want (just avoid most of the spirit weapons, Shield is great for projectile protection). Avoid shield offhand at all costs, use scepter or torch as offhand (scepter for damage mitigation, torch for dps/condi).
Thief
-Guerilla fighter that excels at flying in and out of combat (stealths, shadowsteps, tricks, Steal)
-Amazing burst damage, decent sustained damage (backstabs)
-Access to evades outside of the normal one (D/D, etc.)
-Great for skips in dungeons (smoke fields, Shadow Refuge)
-Amazing CC (Head Shot, smoke fields for blinds)
-Decent projectile protection (Smoke Screen, low CD)
-Best blast finisher (Shortbow 2, very short CD)
-Great for tagging loot (Shortbow auto-attack)
Thieves are masters of CC on bosses, as they have the best and fastest CC in the form of Headshot (pistol offhand), which, when used well, can be devastating on every other mob you fight (PvP notwithstanding). Extra resource (initiative) is easy to understand and replenish. Highly mobile in combat which makes them ideal for WvW roaming and PvP, and wanted in dungeons for skips/random trash. Avoid P/P if you want to maximise DPS and effectiveness (it’s still fun to use and perfectly viable). Builds must be direct, with less room for error in PvP and WvW. PvE is much more open-ended for thieves in terms of builds (as far as I know).

for example condi necro, is pretty different playstyle than condi mesmer(even though condi mes isnt that good)
