There are no lions in Tyria !
We have no pegasuses in real life. Yet we have statues of them in real life.
We also have no dragons in real life. Yet the Chinese feature them heavily in their new year celebrations and have statues of them.
Maybe the Lion is a mythical creature in their folk lore like the pegasus and dragon are in our folk lore.

I believe there were lions in Elona, so the memory may persist.
The cat tonic will make you a lion or lion cub at times … they have the models. We could see them in game some time, perhaps.
(Note the occasional NPC comments referencing horses when we see none. Another extinct breed?)
OP didn’t play GW1. There be lions. I’d be surprised if most of our mythical creatures didn’t have some kind of basis in reality at some point in the past.

Dragons were spaceships and the Pegasus is a product of genetic manipulation. Don’t you people watch Ancient Aliens?
There were no lions in the Eastern Kingdoms either, but that didn’t stop Stormwind in WoW from having lions. And they actually didn’t remember what was on Kalimdor. Tyrians haven’t lost knowledge of what was in Elona, only what it’s current status is.

Lion’s Arch was originally founded by Elonians.
It would make sense that an animal as culturally iconic as the Lion would make it’s way into the theme of the (then) Krytan capital.
(of course this was all history pre-dating the events in GW1)

Edit – Keeping in mind Establishment and colonization, can be, two different things.
ANet practices “subjective history”, in that what is known to players is what is known to people of that time period. Look at what we knew about prior time periods in the Victorian period or the Renaissance period and you will see how people can get things wrong.

There are no horses in Tyria either yet we see remains of amusement parks that have knights on horsebacks on skritt cities and a shortbow that shoots horses.
Just like there are no lions in south america (in the wild, at least) yet the coat of arms of the city of Caracas (Venezuela) has a lion on it, and their local baseball team is called The Lions.
