As far as I know, in every non-city PvE zone you can do these things:
1) Map exploration (hearts, POI, skill challenges, vistas, waypoints)
2) Dynamic quests
3) Gathering wood, iron, herbs and loot from mobs
4) Big bosses that appear 2-3 times a day in specific times

Is there anything else?

Well there are no hearts to complete in Cursed Shore, Malchor’s Leap, or Straits of Devastation…

Jumping Puzzles are fun to do once… you get the +10 AP for them. However, doing them more than that is not… their rewards are kind of terrible for the investment/skill involved.

AP hunting… there are different zones (not all zones) that have some nook or cranny to explore to get some quick +10 AP or so.

Not-so-big bosses that appear every 10 minutes or so, killing mobs for the sake of it, discover hidden treasures and sites, diving goggles, secret achievements…

Some of the new Collections have items that are found through-out the maps. So, there’s that, as well.

There are also “Mini Dungeons” that you can do. Think of them as a mix between jumping puzzles and exploring I guess. Check this page out for more info:

Apart from that you can truely explore each map. By that I don’t mean getting 100% for the map. I mean look in every nook and cranny, find all the npcs, watch what they do, listen to their conversations. Find all those hidden chests and raid them.
