When transmuting them, do they lose the name and the purple text and turn into whatever exotic you want the stats from? Because I want zerk stats instead of vit/tough. But I guess I can live with that.

After the 28th Update they should not anymore.

As stated:

Transmuting weapons now preserves the higher rarity of the two items.

The only reason not to transmute now is if you use a precursor, as they will loose the property to be used in the Mystic Forge for the Legendary reciepe
