Trying to figure out something to do....
So you want to be able to play the game, but do no questing, PvP, crafting, JPs, leveling or work toward better gear.
If you don’t mind my asking, why the heck did you purchase an MMO?
You are left with WvW, LivingStory (SAB atm), or Activities (Keg Brawl, Belcher’s Bluff, Sanctum Spring, etc.)
You basically said you want to figure out something to do that isn’t PvP or PvE related, so uh, go play a single player game?
It’s a medical condition, they say its terminal….
I’d recommend you to check out the personal story of every race, every branch and all of the orders up ontil the battle for Claw Island.
Perhaps go for world exploration. Even if you have map completion already, there are a ton of hidden things out in the world.
Maybe try some of the dungeons.
But as far as getting the most out of your money, I’d strongly recommend you to stop playing right now if you don’t feel like it.
Perhaps you will get interested in the game later on and have more fun, but if you burn yourself out simply because you feel you need to, then you won’t get as much enjoyment out of the game as you could in the long run.

Why are you playing the game again?
You’ve essentially ruled out large sections of the game because you don’t like to do them. You’ve stated that leveling your characters feels like a grind. I don’t think the external motivation you’re seeking here is going to help you really.
I think you may need to take a small breather from the game. Reassess why it is you bought it, what it was that you enjoyed when you were building your first 2 level 80s, and then potentially try the game again. If during your soul searching, you determine there wasn’t anything you liked about leveling your 2 current max chars, then maybe the game isn’t for you. We all have different tastes in what we like, and don’t like.

Well when the game was in hype phase, it was promised that the game wouldnt have Quest. Which as of now, I no longer enjoy quest in MMOs. They Promised a fully dynamic world, which is why I was interested. something most MMOs dont do.
SPvP in this game is by far the worst kind of instanced PvP I have experienced in a MMO. Its nothing but Arena. Has no meaning to my character. its fully Esport. has no story, and no meaning. I not against instanced PvP, but only like PvP in general when it has meaning to fight other players.
JP were a neat idea at first, until I realized how body size, and speed boost effects them. Giving advantages to one class I may be playing, over another class I could be playing. Its no longer a cool idea. Nothing really special about it after doing so many already.
Levels are just a artificial content lock/ pacer, used primarily in themepark MMOs to keep players on a guided path designed by developers so they dont skip stuff. Thats not a good design for a game that hyped itself on being Dynamic, and having the freedom to explore and do whatever you like. Level restrictions and Dynamic game dont mix. Levels also restrict your play style, since Traits are completely level locked. Meaning unless I level up, I wont be able to play my class a certain way that it was fully designed to. example. Warrior cant instant heal allies until they are level 60 and can unlock the trait that turn shouts into heals. Thats 60 levels of grinding to play a certain way that should have been there from the start if a player chooses. Levels also restrict me from playing certain events and going to certain areas. Why have that in a game that is all about dynamic gameplay and exploration. I dont need levels to lock me from playing events and going places.
Also Gear is the same way. its cool to look unique and dress up your avatar. But when does Grinding vs Discovery lines get blurred? Its cool playing and discovering these great looking items. But when you are grinding for the sole reason to get a certain cool looking item, then the game becomes nothing but just a grind. Wasnt that what Anet was hyping GW2 to be against?! Yes because I remember them hyping GW2 to be the anti Grind.
