What do i do once i hit 80?
I know it sounds like a non-answer, but Im serious – at level 80, you just sit back and enjoy the game. There is quite a bit to do outside of WvW, including the living story, pvp, dungeons, fractals, open world PVE (temples, events, Jumping Puzzles, etc), guild missions, etc.
What you have to be wary of is falling into the “I have to progress” trap. Gear level is pretty much a non issue at 80. You get exotics really fast and, if you really want them, you can grind out crafting for ascended (exotic is more than good enough for all content outside of high level fractals, though).
At max level, there is no character progression whatsoever in GW2 outside of continually changing the way your character looks (which can be fun). Once that sinks in (and it takes time if youre used to other MMOs), endgame in GW2 makes more sense.
To your question about how long, you can usually get fully decked out in exotics in a day or two. Getting full ascended is time gated, so that takes a little longer (few weeks), but, again, be wary of thinking of that as end game progression. It really isnt.
About Gear: I think the easiest way to get Dire gear would be to buy it from the Trading Post. You should be able to get enough money from normal game-play to afford it pretty fast (especially if you run some dungeons every day).
Otherwise, you could craft it, but if you want full exotic gear you’d have to be Leatherworker, Weaponsmith and Huntsman in order to craft your armour and your pistol and dagger. Crafting exotic armour also takes a fair amount of Tier 6 materials (and ectos), but this shouldn’t be too much of a problem if you run around Orr/WvW and participate in world boss events.
As for what you do when you’re level 80:
-Explore Orr
-Take part in more dungeons (especially considering most PUGs only accept level 80s too)
-Run Fractals (once again, most PUGs ask for 80, but 80 is a must for fractals above level 10).
-World completion (personally I love exploring, but its not to everybody’s tastes)
-Consider crafting ascended gear or a legendary weapon
-Work towards a particular aesthetic that you want for your character e.g. work towards dungeon armour/weapons, cultural armour, gathering materials for unique mystic forge exotics, farm gold for something off of TP
-Hunt Achievements and complete them
-Play through Personal Story and Living Story

Two years after hitting lvl 80 and I’m still trying to find the answer to this question.
I agree with Blaeys.
Get your full set of exotics. Only takes a little gold or karma depending on what you need for your build.
But, unless you have a taste for repetitive grind, avoid setting yourself to chase ascended or legendary gear at all costs. Instead, do whatever seems interesting in game, and do everything you can to ignore that the game only feeds you a trickle of reward for playing that way.
Eventually, you’ll look at your collection tabs and account wallet and see that you’ve slowly accumulated enough stuff to make a stab at crafting an ascended item or Mystic Toilet weapon for the looks.
Sit down and figure out how many dailies, gathering nodes, world bosses, or gold you need to accumulate to get to a given reward is a recipe for turning the game into a 9-5, minimum wage job.

the only real changes are that certain zones are level 80, so you’ll be at level parity when you go there, and you have full access to everything in your build(that unlocks based on level).
but from a gameplay perspective it doesn’t change anything.

I’ve haven’t started any professions yet, I’m thinking of going for huntsman/Leatherworker then? Is this a good combo or does it double up on the same materials? Is cooking useful at all, the food buffs seem pretty cool to be able to cook yourself.
I really enjoy working towards crafting something that looks cool, I also like the whole skin thing as i have an idea of the look for my character.
What are laurels for? I’ve seen some boxes you can buy with some Thief gear in them but not really much else. Should i use them on these Thief treasure chests or whatever they’re called?
I also have a ton of ascalonian tears but haven’t found out what they’re for yet. Each city has skins available with a different look that you can buy for Karma, am i right in thinking this?
The end game idea sounds great for me, as i hated the structure of other MMO’s. However i don’t mind grinding for ages to get a legendary weapon which looks amazing and has higher dps etc
Ascalonian tears are dungeon token which you can use (amongst other things) to buy exotic armour and weapons with unique skins. Different dungeons have a different range of skins for all armour types and weapons.
I would recommend saving your laurels to buy ascended rings and amulet for you Thief. Purchase rings at the Laurel vendor in WvW to save a lot of laurels (you subsidise the cost by also paying a little bit in badges of honour). Ascended rings give you a bit better stats than exotics, and can also be infused with agony resistance infusions (which will allow you to do higher level fractals).
If you want to purchase rings for your Thief with dire stats, the ones to buy would be Ralena’s Band and Vassar’s Band (you can’t equip two Ralena’s bands or two Vassar’s bands). Both have the same stats, but one has an offensive infusion slot and the other a defensive infusion slot (which doesn’t make a whole heap of difference).
From what I’ve heard, the Thief gear/profession specific gear isn’t really worth using laurels on as the stuff you’ll get won’t be very valuable (you might not get the right stats or the right level).

Which is kind of a shame. One of the great things about GW1 was that there were only 20 levels. Once you hit 20, there was still a HUGE amount of content to enjoy. Leveling wasn’t the point, playing the game was.
Unfortunately, with GW2 a lot of emphasis is on leveling, but by the time you’ve hit 80, it’s quite possible to have seen and done a lot of what the game has to offer.
That said, a lot of that content is really worth doing a few times.
For further grinding, there’s WvW zergfesting or ‘structured PvP’.
And there’s RP, which is just about the only thing that keeps me in the game anymore, despite ANet’s lack of attention to such a dedicated gem-spending group.
What? I feel the game really starts at lvl 80. So much. Two months in lvl 80, and I’m just starting to map the world, instead of just opening them. Jumping puzzles. Events. Collectibles that drop out of particular events. Build tuning. PvP. (WvW was ok even at lower levels.) Observing commanding; how to lead people at WvW or between events at Orr. Checking what others do: forum, wiki, youtube, build sites.

Surprisingly people haven’t touched upon it yet, but it might be worth your while to find an active guild to do stuff with if you haven’t already. That way you might get dragged along in doing things you might not have thought of doing yourself. If you have no specific content you want to aim at you can just join a general guild. It’s not always easy to find one where you fit in but trying does no harm.
